Anzac Day – a special new recipe

Today is ANZAC day in New Zealand (& Australia).  For my overseas readers, ANZAC’s are the Australian and New Zealand Army Corp, and the day was originally the anniversary of the landing of our ANZACs on the Gallipoli Peninsula in 1915.  Today it commemorates all our soldiers killed in war and also honours returned servicemen and women.

As I’ve aged (no smart comments please!), my understanding and appreciation of those who fought for us has grown.  I think about my boys having to go off and fight for their country – it’s a scary thought for a Mum.   I am truly grateful for those who fought for us, and for those mothers, aunts, sisters, who said goodbye to their men, not knowing if they’d return.  The logistics of fighting a war on the other side of the world, especially in those days, is mind blowing.  It is so important that we understand the immensity of the sacrifice of all during those wars, I am sure whether you were fighting it in a battle somewhere, or supporting it back home, the effects of it were deep.

Whoa, now that’s getting a little deep for my little blog.  Onto lighter things …

One of our family traditions on Anzac Day is to bake Anzac biscuits (cookies).  These biscuits were sent by wives and women’s groups to soldiers abroad because the ingredients don’t spoil easily.  They’re actually super yum, so I do make them at other times of the year, sometimes throwing in some extras like white chocolate, or apricots.

But as I was browsing the internet the other day, I came across a recipe for Anzac muffins with a caramel filling, which sounded really good!

So today instead of cookies, my kitchen is wafting in the aroma of beautiful muffins.

I LOVE the Anzac flavour, and am also very partial to caramel, so I was sold with just the title!  But I’m pleased to say these muffins totally delivered on taste as well!
